Wood chips brought my charcoal grill to a whole new level. I originally got a charcoal grill because I find it gives my grilling a more authentic flavor. I’m also bias. I grew up with a charcoal grill, and at least once during the summer, my dad and I would have a grilling marathon. Brats, chicken, steak, pork chops, and then finally, our beer turkey. We would take a can of Leinie’s beer, put it “up the turkey’s butt,” then grill it for a better part of the afternoon.
You know it’s a good grilling day when, the next day even after my shower, I smelled of smoke. I wish they would make it into a cologne. But, nothing contends with my appetite for grilled foods, and that’s why I got a charcoal grill. Little did I know, grilling could get even better.
Wood chips and chunks are used in smoking food on your grill. First, you soak the chips in water for about an hour, drain it, then you drop some chips on the coals right before you start grilling. It intensifies the smoke, and the meat just sucks in the flavor. They even sell different flavored wood now, so you can have a cherry or apple type smoke which adds a whole new dimension to your food.
You can also do this smoking technique with gas grills, I’ve heard, but I’m not sure of the details. But if you love grilling, you’d be crazy not to look into this smoking technique. Now that I’m hooked, I can never go back to just plain grilling.
